Benefits of corn –

Chelli is himachali or uttrakhandi terms for corn. It is my favorite snack. I enjoy corn simply by adding vegetables and butter and then roasting them. It tastes heavenly. Or recently I discovered the recipe of Chelli kebabs which are equally delicious.
Corn helps in curing cold and bad throat during the cold days.

Things required to make Chelli kebabs –

Ingredients Required
  1. 1 cup + 2 tbsp corn ( fresh or  frozen)
  2. 2 potatoes, boiled & mashed
  3. ½ onion, finely chopped
  4. ¼ capsicum, finely chopped
  5. 1 green chilli, finely chopped
  6. ½ tsp ginger paste (adrak paste)
  7. ½ tsp Kashmiri red chili powder (lal mirch powder)
  8. salt to taste
  9. ¼ tsp turmeric powder ( haldi )
  10. ½ tsp garam masala powder
  11. 1 tbsp besan roasted ( chickpeas flour)
  12. ½ tsp chaat masala
  13. ¼ cup bread crumbs
  14. 2 tbsp coriander leaves, finely chopped
  15. 1 tbsp corn flour
  16. ¼ tsp pepper, crushed
  17. 1 tbsp lemon juice
  18. oil for deep frying.

Recipe of Chelli Kebabs

Method of prepreparation
1- firstly, in a small blender take boiled corn or frozen corn.
2- further blend to coarse paste without adding any water.
3- transfer the paste to a large mixing bowl.
4- also add boiled and mashed potato.
5- additionally add onion, capsicum, chilli and ginger paste.
6- furthermore add spices and salt.
also add ¼ cup bread crumbs. or crumble fresh bread.
7-add in 1 tbsp roasted besan or gram flour and coriander leaves
8- continue adding 1 tbsp corn flour, 2 tbsp of boiled corn and crushed black pepper.
9- also add lemon juice.
combine everything well to form a dough.
10- add in more bread crumbs if there is too much moisture.
11- make sure to have a non sticky dough.
12- further, make bullet shaped kebabs greasing hands with oil.
deep fry them into hot oil.
13- stir occasionally and fry till the kebabs turn golden brown on medium flame.
14- finally, serve corn kebabs with tomato sauce and few slices of onion.
