Information about Mexican Food

Mexican cuisine is primarily a fusion of indigenous Mesoamerican cooking with European, especially Spanish, elements added after the Spanish conquest of the Aztec Empire in the 16th century. The staples are native foods, such as corn, beans, avocados, tomatoes, and chili peppers, along with rice, which was brought by the Spanish. And here we are making one such great Recipe of Burrito by Chef Rahul Bhatt

Recipe of Burrito from Mexican Cuisine –

Ingredients 
  1. 1/2 cup chopped onions
  2. 2 garlic cloves, minced
  3. 1 jalapeño pepper, seeded and chopped
  4. 1 (8-ounce) package sliced fresh mushrooms
  5. 1 (6-ounce) package fresh baby spinach leaves
  6. 1 tablespoon fresh lime juice
  7. 1/2 teaspoon kosher salt
  8. 1/2 teaspoon ground cumin
  9. 1.5 cup cooked long grain brown rice
  10. 1 (15-ounce) can black beans, rinsed and drained
  11. 4 ounces shredded reduced-fat 4-cheese Mexican blend cheese (about 1 cup)
  12. 8 (8-inch) whole-wheat flour tortillas

Method of Making Burrito

1 Heat a large skillet over medium-high heat. Coat pan with cooking spray.
2. Add chopped onion, garlic, jalapeño, and mushrooms; sauté 5 minutes, stirring occasionally. Gradually add spinach; cook 1 to 2 minutes, stirring until wilted.
3. Stir in lime juice, salt, and cumin. Add rice and beans; cook, stirring constantly, 1 minute or until thoroughly heated. Add cheese, stirring until melted.
4. Warm tortillas according to package directions. Spoon about 2/3 cup mushroom mixture down center of each tortilla; roll up. Serve with salsa, if desired.
